Shelley's oven roasted basil potatoes

5-6 Small red, Yukon gold or fingerling potatoes
2-3 Tbsp. Olive oil
1 teaspoon of basil
Fresh ground pepper to taste

Prep. Time → 10 min

Cook Time → 20 min

1. Preheat oven to 400 degrees

2. Scrub potatoes, leaving skins on

3. Cut potatoes into wedges about 1 to 1.5 inches

4. Toss potatoes in olive oil and basil.

5. Add fresh ground pepper to taste

6. Bake, uncovered for approximately 20 minutes or until potatoes are golden brown. Serve wit ketchup!

7. NOTE: basil could be replaced by curry powder, oregano or paprika.
