4 1/2 Lb Standing Rib Roast
1/4 Cup Flour
2 Onions, cut in large chunks
1 Tablespoon Salt
2 Tablespoons Fresh Ground Black Pepper

1. Remove roast from refrigerator two and a half to four hours prior to cooking so that it reaches room temperature.
Preheat oven to 500º F.
Place roast in a shallow roasting pan, fat side up.
Dust the roast completely with flour, rubbing in lightly. Sprinkle with salt and pepper.
After seasoning, place onions on the roast and in the pan.
Put roast in the oven and cook, approximately 15 minutes per rib or five minutes per pound. Do not open oven door.
When cooking time is complete, shut off oven and leave door closed.
Leave roast in oven for one to four hours.
