Quinoa salad

Ingredients for 1 large bowl-can serve a party depending on how it will be served
Red quinoa, balsamic vinagrette, fresh mozzarella, red onion or shallot, cucumber, tomatoes.

Directions
1. 1.Cook quinoa: 1 cup for every 2 cups of water-cooks just like rice; bring to a boil then let simmer until water is gone.
2. Chill the quinoa
3. Chop the veggies finely
4. Make mozzarella pieces as small or as large as you'd like
5. Combine all ingredients in as much or as little balsamic vinagrette as you'd like; I like about a 1/2 cup per 1 cup of pre-boiled qunioa.
