Quinoa and chickpea salad (vegetarian or vegan)

1 can of chickpeas
1 small can of black olives (sliced)
2 tomatoes (chopped)
2 cups quinoa
1 cube vegetable bouillon
4 cups of water
optional: feta cheese crumbles, fresh parsley (chopped)

Prep. Time → 10 min

Cook Time → 45 min

1. Heat the water in a pot, add bouillon cube.
Pour quinoa into pot, cook until soft (this can take 45 minutes).
Put quinoa into a bowl, add chickpeas, olives, and tomatoes.
Add optional parsley and feta cheese crumbles.
