Plum chutney
Recipe by
12 cups sliced plums (I use prune plums)
1/2 cup finely chopped green pepper
1 1/2 cup raisins
4 cups sugar
1 cup cut up crystallized ginger
3 cups vinegar
1/2 tsp salt
1/2 tsp whole cloves
1/2 tsp whole allspice
3 - 3 inch cinnamon sticks
1. In large kettle stir together fruit, green pepper, raisins, sugar, ginger, vinegar, and salt.
2. Tie spices in cheese cloth and place in kettle.
3. Heat to boiling, stirring frequently.
4. Reduce heat. Stirring frequently, simmer 1 1/2 to 2 hours or until dark and syrupy.

6. For Pear Chutney substitute 10 cups of sliced, pared, pears (about 5 lbs)
