Pizza topped baked sweet potato

2 sweet potatoes
1 small onion sliced
1 courgette, cut in half, lengthways and then sliced
4 button mushrooms, sliced
passata
Italian mixed herbs
2x42g of mozzarella (2xHEa)
Frylight or Pam Spray
Salt and Pepper to season
1. Method
2. Preheat the oven to 200c or 400f
Place sweet potatoes on a baking tray and bake for approx 45 minues or until fork tender.
Meanwhile spray a frying pan with Frylight or Pam spray and cook the onion, courgette and mushrooms until golden.
When the sweet potatoes are tender, carefully slice each one in half. Spread over each cut half with some passata, sprinkle with Italian mixed herbs and season with some salt and pepper.
Add the onion, courgette and mushrooms to the top of each potato half and sprinkle with the mozzarella.
Place back in the oven until cheese has melted and is golden.
Serve with a side mixed salad
