Pears poached in sparkling wine
Recipe by
750ml dry sparkling wine
80ml castor sugar
1 vanilla pod, cut lengthwise
1x420g tin baby pears in syrup
1x420g tin baby apples with stems in syrup
250ml mascarpone or double greek yoghurt, to serve
Prep. Time → 20 min
Cook Time → 10-20 min
1. Combine Sparkling wine and sugar in sauce pan
2. Drain pears and apple and reserve the syrup
3. Add syrup and vanilla pod to sparkling wine.
4. Reduce sparkling wine and syrup by 2 thirds.
5. Place pears and apples in syrup and heat through
