Peanut soup

1 onion
2 cloves garlic
olive oil
2# fresh yams or sweet potatoes or canned. about 4#
1.5 T ginger, minced
1 tsp cinnamon
2 tsp cumin
.5 tsp each turmeric and cayenne
4-5 cups+ vegetable stock
.25 c peanut butter
kale, chopped in small pieces
garnishes: green onion, parsley, cilantro, sliced lime, .25 c roasted chopped peanuts

Prep. Time → 30 min

Cook Time → 30 min

1. sure the onions and garlic til translucent.
boil the sweet potatoes or yams til very soft and drain, reserving the water in case you need some extra liquid for the soup.
Or open up cans of s.p or yams and drain.
add everything together and mash out chunks if you want. Bring all ingredients to a boil and let it simmer a half hour. Taste and add whatever it needs. Can let it set awhile or serve immediately with the garnishes and croutons if desired.
