Paella de maria theresa
Recipe byOlive oil
Chicken (breast/leg with or without bones) 10-12 pieces
Squid - 4 baby squids
Red Pepper x 2
Green Pepper x 1
Fresh Tomatoes x 4 big ones
Tinned Tomatoes x regular tin
Salt
Black Pepper
Saffron
3 cloves garlic - chopped
parsley
Meat Stock - 3/4 pint
Paella Rice (redundo rice) 450-500g
Tuna x 1 tin
Peas - if you reeally want them!
Prep. Time → 20 min
Cook Time → 60 min
1. peel/chop/dice all veg and things before starting
2. add the olive oil to a pan and heat
add the chicken parts and fry for 15 mins
add the chopped red and green peppers, and fry in the pan
take the chicken out and set aside
chop the squid into rings or strips and add to the pan
put the chicken back in
skin fresh tomatoes and chop and add
add the tinned tomatoes to the pan too
combine all in the pan and add the garlic and parsley
add the hot meat stock and the seasoning and simmer on a low heat
add tuna/peas if wanted at this point
add redundo/paella rice and bring to boil for 15 mins then simmer
add saffron and tuna
do a taste test to check rice is cooked but not mushy,
leave to stand for 10 mins before serving
3. you can reheat the dish once
not suitable for freezing
the dish is pretty versatile...add chorizo or sausages for a more mainland dish, or add seafood for a paella de mariscos
