P-butter cookies

110g crunchy peanut butter
80g unsalted butter
90g sugar
80g brown cane sugar
220g flour
2 eggs
15g baking powder
pinch of nutmeg
orange zest or grated ginger(optional)
Prep. Time → 40 min
Cook Time → 25 min
1. soften butter (half-melt), add sugar, cane sugar and peanut butter and mix for few minutes
2. Add beaten eggs
3. Add flour, baking powder, nutmeg, orange zest or ginger(if using) and peanuts (you can roughly crush it) and mix all together until smooth
4. Take the dough out of mixing bowl and put it on cling film, wrap it and place in freezer for about 30min until hardened


5. After dough hardened, but still malleable roll it into dough-stick and cut into 30 even discs



6. Place it on grease proof paper layered baking trays and put in preheated to 150C oven for about 15min.


7. Watch it as it bakes! high contents of sugar mean it burns easily! Take it out when golden brown, its soft at the beginning but once it cools it will get crunchy
