Oatmeal raisin cookies
Recipe by
1 1/2 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
2 sticks unsalted butter, softened
1 cup granulated sugar
1 cup light brown sugar
2 large eggs
3 cups old fashioned rolled oats
1 1/2 cups raisins
Prep. Time → 15 minutes min
Cook Time → 22minutes min
1. Heat oven to 325 degrees and adjust racks to upper and lower middle positions.
Whisk flour, baking powder, salt and nutmeg in a medium bowl and set aside.
Beat the butter and sugars together in a large bowl using an electric mixer on medium speed until light and fluffy.
Beat in eggs, one at a time, until well combined, about 30 seconds, scraping down the bowl and beaters as needed.
Reduce the mixer speed to low and slowly mix the flour mixture until combined, about 30 seconds.
Mix in the oats and raisins until just incorporated.
Working with 1/4 cup of dough at a time, roll the dough into balls and lay on two parchment lined cookie sheets, spaced about 2 1/2 inches apart.
Flatten the cookies slightly using the palm of your hand.
Bake until the tops of the cookies are lightly golden but the centers are still puffy, about 22-25 minutes.
Let the cookies cool on the baking sheets for 10 minutes then serve warm or transfer to a wire rack and let cool completely.
