Nanny's apple cake

1 3/4 C. sugar
3 eggs
1 C. oil
2 C. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 C. chopped apples
1 C. chopped nuts (optional)
Prep. Time → 15 min
Cook Time → 50 min
1. Beat sugar and eggs.
Add oil and mix until creamy.
Sift flour, soda, salt and cinnamon together and add to creamed mixture.
Add vanilla.
Fold in apples and nuts.
Turn into a well greased and floured 9x13 pan and bake for 50 minutes.
2. *I use Granny Smith Apples, when cake is done dust it with powdered sugar.

Extremely good cake and not a lot of trouble.
You don't mention what temp to cook it at. I tried it and the apples sank to the bottom making it a stodgy mess in the bottom of the tin but we still ate it and it was lovely all the same ! x
