My mum's creole salmon
Recipe by
2 Salmon fillets, 2-3 tomatoes sliced, 1 large onion chopped, squeeze lemon juice, soya sauce, a small piece of ginger finely chopped , 2-3 cloves garlic finely chopped
Prep. Time → 10 min
Cook Time → 20 min
1. Add a little oil to a hot wok, cook the onion until it softens. Add a splash of soya sauce, ginger and garlic and cook for a few minutes. Add the tomato and cook for a further minute or so (ensure the tomato doesn't go too soft).
2. Place the salmon in a overproof dish. Squeeze the lemon juice over it then pour the onion/tomato over the top. I like my soya sauce so I splash a bit more over the ingredients now!
3. Bake in the oven (190 degrees) for approx 15 minutes.
4. Serve with rice.
