My alternative christmas cake
Recipe by100 g sultanas
2 medium cooking apples
100 g wall nuts
300 g self-raising flour
4 eggs
100 g dark brown sugar
50 g molasses
125 ml oil
50 ml brandy
1 Orange (zest and juice)
1 teaspoon ground cinnamon
Pinch of ground cloves
25 g butter
Grease proof paper
Prep. Time → 20 min
Cook Time → 25 min
1. Place flour, sugar, ground cinnamon, finely chopped wall nuts & ground cloves in a large mixing bowl
2. Dice the apples into ½ cm chunks and mix with the dry items in the bowl
3. Add orange zest juice eggs oil molasses sultanas brandy to the bowl and mix together
4. Cut grease proof paper to fit a 28 cm loose bottomed tin butter the tin and stick the paper to the sides and bottom
5. Pour the mix into the prepared tin, level the top
6. Cook at 180 C for 20 to 25 minutes or until a skewer comes out clean
Cool on a wire rack then enjoy
