Mixed vegetable rice

1 cup of basmati or long grain rice
2 cups of vegetable stock
1 onion, finely chopped
1 yellow pepper, finely chopped
1 red pepper, finely chopped
1 small carrot, finely chopped
1/2 cup of frozen peas
1 clove of garlic crushed
1 spring onion, finely chopped
black pepper
olive oil Frylight/Pam spray
1. Method
2. Heat the stock in a saucepan and add the rice, bring to the boil, reduce heat, cover and simmer until all stock is absorbed.
Empty rice into a sieve and rinse with cold water, this will stop it become too sticky. Set aside.
Spray a frying pan with olive oil spray. Add crushed garlic clove and lightly fry to bring out the flavour, mixing it around the pan as you do so.
Add all the onion, carrot and peppers and stir fry until tender. Add the peas and cook for a further 2 minutes. Add a little water if the vegetables start to stick.
Stir in the rice and mix thoroughly until heated through.
Top with finely chopped spring onion and serve.
