Mixed fruit genoise sponge

4 Eggs
110g Caster Sugar
110g Plain Flour
300g Whipping Cream
80g Strawberry Jam
170g Sliced Bluebrerries
170 Sliced Raspberries
170g Sliced Strawberries
1 Tablespoon of Icing sugar for on top
Prep. Time → 10 min
Cook Time → 50 min
1. 1. Preheat Oven to 180/160, Grease a round your cake tin and line with baking paper.
2. Put eggs and sugar in to the electric mixer and mix untill doubled in hight and think and white.
3. Add in the sieved flour a fold in.
4. Pour the mixture in to your cake tin then place in oven for 20 mins, once baked take out and leave to cool.
5. Once cake has cooled cut the cake in half and spread on the jam, then mix the whipping cream in the electrix mixer and spread on top of the jam.
6. Place the sliced blueberries, raspberries and strawberries on top of the cake and then put the top half of the cake back on the dust using a sieve on top of the cake.
