Mexican stir fry with quorn fajita strips sw

- 1 pack Quorn fajita strips
- Fry Light
- 1 onion
- 1 red chilli
- 2 cloves garlic, crushed
- 1 red pepper
- 85gm (3oz) canned Black Eye beans, drained
- 85gm (3oz) sweetcorn
- 300gm long grain white rice
- 2 tomatoes
- 60ml (4tbsp) coconut cream (10 Syns)
- 3tbsp fresh coriander, finely chopped
- salt & freshly ground black pepper
- a few drops of Tabasco sauce (optional)
1. Method
1. Cook the rice according to the instructions on the pack, set to one side.
2. Heat a large pan sprayed with Fry Light and cook the onion for 5-6 minutes or until softened. Stir in the red chilli, garlic and red pepper and cook for a further 3-5 minutes.
3. Stir in the Quorn fajita strips and cook for five minutes before adding the beans and sweetcorn.
4. Finally, stir in the rice, tomatoes, coconut cream and coriander. Season to taste and add a few drops of Tabasco sauce for an extra kick if required. Simmer gently for 3-4 minutes and serve immediately.
