Malabar rice pathiri
Recipe by
Roasted Rice Flour- 2 cups + for dusting
Water-2 cups
Salt
1. Sieve rice flour once.
Boil water in a deep wide pan.Add salt and simmer the flame.
Then slowly add rice flour to the water and mix thoroughly and continuously.Make sure to stir the rice flour evenly.(in low flame ).
2. Then remove from fire and knead the dough using the back of a metal/wooden spoon.( because the dough will be very hot at this stage).When the dough becomes warm enough,use your hands and continue kneading for another 4-5 mints.( don't add more water or rice flour at any stage:this will change the texture of pathiri ).
3. Make a smooth and non sticky dough by continuous kneading.

4. Then divide the dough into equal lemon sized balls.

5. Take a ball,press it with your hands,dust it with some rice flour,and roll it into thin circle.

6. You can use a round vessel with sharp edges to give the pathiri a perfect shape :).

7. Repeat the same with all the other dough balls.

8. Now heat a flat thawa/pan and place the pathiri on it.When it starts bubbling,flip it over.Gently press with a spatula/flat spoon and the pathiri will puff up.remove from fire.( pathiris shouldn't be brown,they should remain white even after cooking ).

9. Enjoy with any non veg side dish.
