Lime cilantro chicken tacos
Recipe by1/4 cup fresh lime juice
1 tsp grated lime rind
1 tsp soy sauce
2 tbsp chopped fresh cilantro
1 tsp ground cumin
2 1/2 cups shredded rotisserie chicken
8 tortillas
2 tbsp olive oil
2 red onions - sliced
1 red bell pepper - sliced
1 yellow bell pepper - sliced
2 garlic cloves - minced
S/P to taste
1. Preheat oven to 325 F.
2. Whisk together lime juice and rind, soy sauce, cilantro and cumin in a large bowl. Add shredded chicken, toss
3. Warm tortillas in oven, wrapped in tin foil.
4. Heat olive oil in a large skillet. Add onions and peppers, saute over high heat until browned. Add garlic, s/p, cook 2 min.
5. Spoon chicken mixture and bell peppers into tortillas, serve.
