Lettuce roll up with a bit of mexican flavor
Recipe by2 tbsps black beans canned - rinsed/drained
2 tbsps avocado - smashed
2 tbsps 0%-Fat Greek yogurt
1 egg white - from hardboiled egg made ahead of time, yolk discarded - chopped
3 tbsps salsa - divided
3 leaves lettuce - (for wrap) stack staggered on top of each other for mostly triple thickness to avoid mess
1. In a small bowl mash black beans with the avocado and yogurt. Stir in chopped egg whites and 1 tablespoon of salsa. Scoop it all into the “lettuce wrap” and use the remainder of salsa for dipping.
2. One of these is about 1 block. They'd make an awesome snack, or just triple/quadruple the recipe for a meal depending on how many blocks you're looking for.
