Lentil curry

Ingredients for 4 people
* 1 onion, chopped
* 2 tablespoons oil
* 2 teaspoons hot curry powder
* 250g red lentils
* 750ml hot vegetable stock
* 2 tablespoons mango chutney
* freshly ground black pepper to taste
Directions
1. 1. Place the onion & oil in a bowl, cover & cook on HIGH for 2 minutes.
2. 2. Add the curry powder & cook for 1 minute.
3. 3. Stir in the remaining ingredients, cover & cook on HIGH for 20 minutes.
4. 4. Check the seasoning, stir well then transfer to a warmed serving dish.
