5 Lb Leg of Lamb, bone in
2 Cloves Garlic, sliced
1/2 Teaspoon Salt and Pepper
4 Large Carrots, peeled

1. Wipe roast clean with paper towels.
Make slits in roast and insert garlic slices.
Season liberally with salt and pepper.
Place roast potatoes and carrots around the roast.
Roast at 400º F for 15 minutes, then lower to 350º F to 375º F for one hour.
