Leek and tattie soup,

Ingredients for 4 Litre Pot
4 Large Potatoes
I large Leek
1 Medium Onion
2 Litres of Chicken Stock
salt and pepper to taste
Tablespoon of fat or oil for frying
Prep. Time → 5/10 min
Cook Time → 30/40 min

Directions
1. Chop onion and brown gently in the fat or oil.
Chop potatoes into palatable chunks , chop the leek and add to pot.
(at this stage I like to crumble a stock cube over the browning vegetables)
add the stock , top up with water to cover if necessary, simmer for 30/40 minutes .
season to taste.
I think the soup is best if left for a few hours
