Lamington...(eggless)
Recipe by
2cups (260 grams) all-purpose flour
2 teaspoons baking powder
1 tspn baking soda
1/4 teaspoon salt
1/2 cup (113 grams) unsalted butter, at room temperature
3/4 cup (150 grams) granulated white sugar
1/2 cup condensed milk ( see notes )
1 teaspoon pure vanilla extract
1/2 cup (120 ml) milk
Chocolate Frosting
4 cups (1 lb.) (454 grams) confectioners' (powdered or icing) sugar, sifted
1/3 cup (30 grams) unsweetened cocoa powder
3 tablespoons (42 grams) unsalted butter
1/2 cup (120 ml) milk
Coating
2 cups (480 ml) unsweetened desiccated coconut, finely ground
1. Preheat the oven to 350F, line a baking sheet over a squarepan . Beat together the butter and sugar until they turns creamy.
Add the sweetened condensed milk,vanilla essence,milk to it and beat again until the mixture turns soft.
Meanwhile sift the flour with baking soda and baking powder. Now add the dry ingredients to the wet ingredients ,mix with a spatula until everything get well mixed.
2. Pour the cake batter to the already prepared mould and bake in middle rack for 20-25minutes until a skewer inserted comes out clean.
3. Cool the cake in its pan on a wire rack for 10 minute. Once the cake has completely cooled cut into squares or rectangles. Wrap the cake in plastic wrap and refrigerate (to make them easier to frost) for several hours or even overnight.
4. Chocolate Frosting: Place the confectioners' sugar, cocoa powder, butter and milk in a pan bowl over another pan of boiling water. Stir the mixture until it becomes smooth and of pouring consistency.
dip the lamingtons in the chocolate icing and roll them immediately to the dessicated coconut until the lamingtons gets well coated on all sides.
Let them sit on a wire cooling rack until the chocolate icing gets firms.
