Italian sausage and tortellini soup
Recipe by
1lb of Italian Sausage (Turkey, Chicken or Pork ground or link)
1 cup course chopped Onion
3 medium sized cloves of Garlic (ideal to roast prior but raw works too)
5 cups of Beef Broth or other broth of choice
2 cups chopped canned Tomatoes (1 large can or fresh tomatoes can be used)
1 - 8oz can Tomato Sauce
1 - 8.8 oz bag Dellalo Cheese filled Tortellini (commonly found at large grocery stores in dry pasta aisle) Do not recommend using Costco Cheese Tortellini as the pieces become too large and easily overcooked in the soup, dry Tortellini works much better.
2 medium sized Zucchini, cut lengthwise in two then chunky sliced
1 cup diced or chunky sliced Carrots
( Aim to have zuchini and carrots sized right to become tender at the same time when simmered in broth for 15minutes. )
1/2 cup Yellow or Red Peppers diced
1/2 cup of Water
1/2 cup of Red Wine or Cooking Sherry
3 Tablespoons Parsley chopped
1/2 tsp Basil
1/2 tsp Oregano
Olive or Vegetable Oil
Garnish with Grated Parmesan Cheese
Prep. Time → 15 min
Cook Time → 40 min
1. In a large soup pot, Saute onions and peppers in Oil until Onions are transparent. Add pressed or finely chopped garlic and saute for 1 min more. Crumble and brown ground sausage or if link sausage, saute til almost completely cooked, remove from pot slice lengthwise then dice, return to pot to finish cooking.
2. Add all the Broth, chopped Tomatoes, Tomato Sauce, Water, Wine, Parsley, Basil and Oregano. Bring to a Boil then simmer for 20 min or more, its very forgiving. Then right before your guest arrive, Add Tortellini, Zucchini and Carrots and simmer for an additional 15 minutes or until Tortellini and veggies are done to your liking. Top with Grated Parmesan Cheese garnish. Serve with a yummy salad for a healthy and filling meal. Enjoy!
