homemade lemon curd recipe

3 egg yolks
2 whole eggs
1 cup confectioner sugar
3 zest and juice of lemon
1/2 cup unsalted butter, softened at room temp.
1 pinch of salt

Prep. Time → 10 min

Cook Time → 10 min

1. 1. In a bowl, cream together sugar and butter, and salt.

2. 2.Add in eggs and egg yolks: whisk to combine.

3. 3. Zest lemons over bowl: squeeze juice of lemon, and put in bowl, mix together.

4. 4.Pour mixture in sauce pan, cook low heat for 10 mins, till thickened. Keep stirring.

5. 5.pour in bowl, and wrap with plastic wrap, and put in fridge.
