Homemade Italian Pizza with Tomatoes and Olives! of Veganbond Wife - Recipefy

For the dough
Unbleached All Purpose Flour ( about 11 oz/300 gr)
Warm Water (1 cup/200 ml)
Dry Yeast (1/4 oz/7 gr)
Extra Virgin Olive Oil (2 tbsp)
Sugar (1 teaspoon)
Salt (to taste)

For the dressing
Roma Tomatoes (5 or to your taste/ you can also use cherry tomatoes)
Pitted Olives (to taste)
Garlic (to taste)
Extra Virgin Olive Oil (to quantity)
Salt (to taste)
Oregano (to taste)

Prep. Time → 30 min

Cook Time → 25 min

1. Warm the water. It doesn't have to be too hot, you should be able to put your finger in without burning it!

2. Dissolve the yeast in the water, and then add in the sugar (the sugar helps to activate the yeast!).

3. Put the flour in a large bowl and add the water and the oil. Do not add the water all at one time, it could be too much. Some kinds of flour absorb more water than others!

4. Add salt. Be careful: yeast and salt should never meet because salt works against the leavening of the dough. So, do not put the salt and the yeast together!

5. Knead the dough for at least 10 minutes on a pastry mat covered in flour. It is very important, to obtain a good pizza, how you knead the dough. The perfect kneading allows the gluten to create the right texture for a light and soft pizza. You should fold the dough on itself, on each side, every time rotating it 90 degrees. I know it sounds difficult, so I promise I will post photos that will explain the process: it is easier when you see it!!

6. Put the dough in a large (covered in flour) bowl. Cover it with a kitchen cloth. Leave it leavening for 2 - 2 1/2 hours.

7. In the meantime, prepare the dressing. Chop the garlic in small pieces.

8. Chop the tomatoes, eliminating the seeds.

9. Cut the olives in two parts. You cal also use them whole. I prefer to cut them so they won't fall away from the pizza.

10. Put the garlic, the tomatoes, and the olives in a small bowl. Cover them with the oil. Add salt and oregano according to your taste. Let them marinade for 1 hour.

11. Preheat the oven to 350° - 375 F. The right temperature will depend on your oven.

12. When the dough is ready, put a shred of oil on the pan you are going to use. Then, roll the dough. Start from the center and the spread it with your fingertips. Be careful: you have to move the air bubbles in the dough without breaking them!

13. Spread the dressing on the dough.

14. Let your pizza cook for about 20 - 25 minutes. It will be cooked when the bottom is brown and crispy!

15. Let your pizza cool for 5-7 minutes, then cut and ENJOY with your favorite wine or beer :))
