Guinness christmas cake (familys handed down recipe)

12 ounces self raising flour
8 ounces butter
Pinch of salt
1 teaspoon mixed spice
4 ounces ground almonds
8 ounces caster sugar
10 ounces currants
10 ounces raisins
10 ounces sultanas
4 eggs
Half a bottle of stout/quarter pint (preferably Guinness )
Brown paper for ouside the tin

Prep. Time → 30 min

Cook Time → 180 min

1. Method:
Sieve flour,spice,salt,into a large mixing bowl
Stir in ground almonds
In another bowl cream butter and sugar
Then beat eggs well and mix with stout into a jug
In a separate bowl mix all the dried fruit together
Then in the large bowl containg the flour and spice mix put mix to one side of that bowl place egg mixture the other side add butter and sugar mix to the egg mixture gradually adding flour from the other side repeating this until well blended
Stir in all the dried fruit until well mixed
Line a 9 inch cake tin with greaseproof paper
Put cake mixture into tin and level it down,making a well in the centre
Wrap side of cake tin with brown paper and string
Preheat oven to 150 0c cook cake for 1 hour at this tempature
Lower tempature to 130 cook for further 2 hours
Once cake is cooked and cooled wrap in foil
Brush weekly with sherry ( treating the cake for around 4 weeks )
Top sides and bottom of cake with sherry
Marzipan and decorate to your liking
This recipe is delicious the weekly treating of the cake makes it so moist and tasty a trusted recipe that I use each Xmas :-)
