Grilled fish tacos
Recipe by
Small flour tortillas
2 cups shredded cabbage (red or white)
1lb Grilled fish (white, no salmon)
1 can Black Beans, drained
Green Tobasco Sauce or, better yet, Mean Green Iguana sauce
2 Seeded and Chopped Tomatos
Sliced Pineapple or Mango, grilled (very important!!)
Optional veggies include
sliced green/red/yellow bell peppers
seeded, chopped cucumber
Red Sauce
This sauce is based on the sauce used by the Coho Cafe in Redmond, WA in their grilled fish tacos.
Mayo 1/3 cup
Sour Cream 1/3 cup
Chili Powder 1 1/2 tsp
Lime Juice of 1/2 small lime
Garlic Salt 1/2 tsp or to-taste
Mix ingredients above and chase with a shot of expensive reposado tequila.
White Sauce
This sauce was created in the spirit of the White Sauce used by Taco Del Mar. I think it's even better.
Mayonaise 1/3 c.
Sour Cream 1/3 c.
Green Taco/Enchilada Sauce 1/3 c.
Lime Juice of 1/2 small lime
Garlic Salt 1/2 tsp or to-taste
Ground Black Pepper 1/2 tsp or to-taste
Mean Green Iguana hot sauce 1/2 tsp or to-taste
Prep. Time → 15 min
Cook Time → 10 min
1. Grill the fish under a light seasoning of salt, pepper and perhaps some chili powder.
