Grill-roasted asparagus with slivered garlic
Recipe by1 1/2 pounds asparagus, ends trimmed and discarded
2 large garlic cloves, peeled and thinly sliced
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
Prep. Time → 10 min
Cook Time → 25 min
1. Prepare grill for indirect cooking, by heating only one side of the grill.
2. Use a disposable aluminum pan just large enough to hold a single layer of asparagus.
3. In a shallow dish, combine the asparagus, garlic, oil, and salt and pepper to taste. Toss to coat.
4. Transfer the mixture to the aluminum pan. Place the pan on the grill over the unheated portion of the grill. Cover the grill and cook the asparagus, maintaining the temperature inside the grill at about 350 degrees, until the asparagus is tender and its skin slightly wrinkled, turning the asparagus once or twice during the cooking to help them roast evenly. The asparagus should take 15 to 25 minutes to cook, depending on the thickness of the stalks and the heat inside the grill.
5. Serve immediately.
