Gnocchi (so different to the supermarket variety)

1lb floury potatoes (e.g. King Edwards) peeled and halved
1 medium egg beaten
100-125g (3.25 - 4oz) plan flour plus some for dusting
Salt and pepper

Prep. Time → 15 min

Cook Time → 2 min

1. Boil potatoes until soft

2. Drain and mash until smooth

3. Allow potatoes to cool (otherwise you will cook the egg)

4. Mix the egg and flour into the mashed potatoes

5. Season well with salt and pepper

6. Flour a surface and roll the mixture into 2 x 1" logs

7. Cut the logs into 1/2" long pieces

8. Drop into a pan of boiling water and take out when they bob to the surface

9. Serve with sauce of your choice e.g. Bolognese

10. These can be frozen before cooking, ideally on baking paper and inside a plastic container. To cook from frozen is identical to chilled.
