Gnocchi and sausage bake

6 pork chipolata sausages
1 small red onion sliced
200g of gnocchi
3 red peppers
440g tin of chopped tomatoes
Handful of fresh parsley
75g of feta crumbled

Prep. Time → 10 min

Cook Time → 20 min

1. 1. Preheat the oven to 200c or fan 180c.
2. Heat a glug of olive oil in an oven proof pan and fry the sausages for 5 mins until browned.
3. Remove from the pan and add the sliced onions.
4. Cook over a medium heat until softened and add the sliced peppers for a few mins.
5. Meanwhile, bring a pan of water to the boil and cook the gnocchi for 2 mins or until they rise to the surface. Then drain well.
6. Put the sausages back in to the pan of onions and peppers and add the gnocchi and tinned tomatoes.
7. Stir and season well then top with feta and parsley then bake for 15-20 mins.
