Gazpacho
Recipe by6 medium tomatoes, seeded and diced
2 medium cucumbers (or 1 english cucumber), peeled, seeded and diced
1/2 yellow bell pepper, seeded and diced
1/2 orange bell pepper, seeded and diced
1 large celery stalk, diced
1 large garlic clove, minced
1/3c rice wine vinegar
2Tbs olive oil
1 tsp hot sauce
salt and pepper to taste
Prep. Time → 20 min
Cook Time → 0 min
1. In a large bowl combine all ingredients
2. Mix well
3. Serve with sour cream
*Note: diced red onion can also be added, just be careful because it's taste will take over the longer its in the Gazpacho. I usually keep it on the side and add as needed
