Ela ada/steamed rice snack in banana leaf
Recipe by
Rice flour-1 cup
Oil-1 tspn + 1 tblspn
Hot water-as required
Sugar-1 tblspn
Salt-a pinch
Banana leafs-6 pieces
For filling
Aval-1 /2 cup
Coconut-1/2 cup grated
Jaggery-1/2 cup
Cardamom powder-1/4 tspn
Salt- a pinch
1. Wash aval in cold water 2-3 times.Then soak it by adding 3-4 tblspn water for about 5 mints.The aval should be soft but not sticky.Use the thick variety of aval .
2. In a deep bowl,add rice flour ,oil,sugar and salt.Add water carefully and make a batter thicker than dosa/idli batter.Keep aside.
3. In another bowl,mix together aval,grated coconut,cardamom powder and salt.Mix well with your hands,untill everything is well combined.
4. Then take one piece of banana leaf and pour one spoon full of batter to the center.Spread it to form a circle( picture below ).Then place required amount of filling all over the batter.
Fold the leaf in half.Tuck the ends of the leaf.( pictures below )
Place in a steamer and cook for 5-10 mints.
5. Remove from steamer and serve.
6. Notes:There are two methods of making this snack.Instead of making the batter,you can also make a smooth and soft dough with the rice flour.Then take a lemon sized ball out of it and spread it as thin as possible in the banana leaf.Place the filling and cook as per the instructions given above.
7. Also you can have any filling of your choice.Instead of aval you can use ripe banana also.
