Easy alfredo - no cream

2 tsp extra virgin olive oil
1 small onion, diced
1 garlic clove, minced
2 cups skim milk
1 cup chicken or vegetable broth
3 tbsp all-purpose flour
1/2 tsp salt
1/4 tsp coarsely ground black pepper
1/2 cup freshly grated parmesan

1. heat oil in a 12-inch skillet, ad onion and garlic and cook until golden. In medium bowl, whisk together the milk, broth, flour, salt, and pepper until well-blended. stir the mixture into the skillet and cook until the meixture thickens and boils. Stir in the parmesan cheese.

2. This is enough sauce to coat a one lb. box of fettucine when it has been cooked. Throw in a bunch of broccoli flowerets for color as a nice touch.
