Deep south cajun swordfish with tomato salsa sw

- 5 tomatoes, diced
- ½ onion, diced
- 1 tbsp Schwartz Pasta Special Blend Spicy Italian Seasoning
- Fry Light
- 1 tbsp red wine vinegar
- 4 x 170gm (6 oz) swordfish steaks, wiped
- 1 tbsp Schwartz Grill & Sizzle Special Blend Cajun Seasoning
- few mixed salad leaves
- lime wedges to garnish
1. Method
1. In a bowl, mix together the tomatoes and onion. Drizzle over the red wine vinegar, spray with Fry Light and stir in the Spicy Italian Seasoning. Toss and leave to one side whilst you prepare the fish.
2. Sprinkle the swordish steaks with the Cajun Seasoning. Heat a griddle and drizzle the fish with oil. Sear for 7 minutes, turning once.
3. Serve the fish on a bed of salad leaves with the salsa and a few wedges of lime.
Variation: To cook on the BBQ, heat the coals and place the prepared swordfish on a rack set over them. Sear for 7 minutes, turning once and spraying with Fry Light if necessary.
