Date nut muffins
Recipe by1 ½ cups chopped dates 3 cups hot water ¾ cup (1 ½ sticks) butter or margarine 1 ½ cups granulated sugar 1 ½ cups water 1 cup pecan pieces 2 extra large eggs 1 ½ tsp baking soda 1 ½ tsp. vanilla ¼ tsp. salt 2 ¾ cups flour
1. In medium bowl, combine dates and hot water. Let stand 10 minutes. Drain and discard water. Cover and refrigerate dates until cold. Heat oven to 350. Line 12 medium muffin cups with paper baking cups or lightly grease. In large bowl, beat together butter and sugar until creamy. Add water, pecans, eggs, baking soda, vanilla, and salt. Mix until well blended. Add flour. Mix just until dry ingredients are moistened. Fold in cold dates. Spoon into muffin cups. Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. Let stand a few minutes before removing from pan.
