Curried chicken pita
Recipe by
1/4 cup finely chopped celery
3 tablespoons dried cranberries
3 tablespoons fat free plain Greek yogurt
2 tablespoons sliced green onion
tablespoon mayonnaise or reduced-fat mayonnaise
teaspoons fat free milk
1/2 teaspoon curry powder
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
cup chopped, cooked chicken breast
tablespoon slivered almonds, toasted
(7- to 8-inch) round whole wheat pita bread
1/2 teaspoon grated orange peel (optional)
1. 1. In small bowl stir together celery, cranberries, yogurt, green onion, mayonnaise, milk, curry powder, garlic powder, salt and pepper. Add chicken and almonds. Toss until combined.
2. Spoon onto pita bread. Sprinkle with orange peel (if desired). Wrap pita around chicken mixture. Serve immediately.
2. Make It A Meal
1 cup raspberry sorbet with 1/3 cup fresh blueberries and 1/4 cup non-dairy whipped topping;
iced tea with lemon wedge.
