- Fry Light
- 1 onion, halved and thinly sliced
- 350gm pack Quorn Pieces
- 142gm (5oz) small open cap mushrooms, halved
- 1 level teaspoon hot English mustard powder
- 2 rounded teaspoons wholegrain mustard (2 Syns)
- 1 rounded teaspoon Dijon mustard (1 Syn)
- 200ml (7fl oz) very low fat fromage frais
- 142ml (¼pt) vegetable stock, made with Vecon
- freshly chopped parsley, to garnish
1. Method
1. Heat a large frying pan sprayed with Fry Light and cook the onion for 2-3 minutes or until softened. Add the Quorn pieces and mushrooms and stir-fry for 3-4 minutes.
2. Blend the three mustards with the fromage frais and stock. Stir this into the mixture and let the sauce bubble for a few minutes and reduce slightly.
3. Season to taste, and serve immediately spooned onto a bed of rice, remembering to count the extra Syns if on an Original day. Garnish with freshly chopped parsley.
