Mushroom- 1 cup
Egg-1
Pepper powdr-1 1/2 tspn
All purpose flour/Maida- 5 tblspn
Onion-1 chopped to cubes
Ginger-garlic paste- 1 tspn
Spring onion-1/4 cup chopped
Chilli powdr-1/2 tspn
Turmeric powdr-1/4 tspn
Soy sauce-1 tspn
Chilli sauce-1tblpsn
Tomato sauce=2tspn
Stock-1 cup ( see notes )
Cornflour-1tspn
Sugar-1tspn
Salt
Oil

1. Clean and cut mushroom into big pieces.Prepare a batter with all purpose flour ,pepper powder ,egg and salt by adding enough water.Marinate the mushroom with the batter and keep for 15 -20 mints.

2. Heat oil in a pan and shallow fry marinated mushroom pieces till they are crispy and golden brown.Remove from fire and keep aside.
In the same pan add sugar ( in low flame ) till it dissolves.Add the onions ,green chilli and ginger-garlic paste.Saute till the onions are transparent.Add the spring onions.Saute for few more secs.Add chilli powdr and turmeric powder and sauces.Saute again.Add the fried mushroom pieces.Mix well.Add the stock.Sprinkle enough salt.Cover and cook for 3-5 mints.Add 3-4 tblspn water to cornflour and mix well without lumps.Add this to the mushroom mixture( this will make the gravy thicker).Mix well.cover and cook for 2 more mints and remove from fire.

3. Notes: to make stock, pressure cook 3 mushrooms,1/2 tspn pepper powder,1 tspn chopped onions and salt by adding 1 cup water for 2 whistles.
Vegetarians could avoid egg while marinating mushrooms.
