Chicken spinach chowder
Recipe by25ml olive oil
1 onion, chopped
1 clove garlic, crushed
500g diced chicken
2 potatoes, peeled and cubed
3 chicken stock cubes
1 liter water
1 can evaporated milk
50g baby spinach
garlic croutons for garnish
1. Saute onion and garlic in heated oil.
2. Add chicken, stirring until chicken is lightly browned and almost cooked.
3. Stir in potatoes, stock cubes and water.
4. Simmer until potatoes are cooked.
5. Stir in evaporated milk and spinach.
6. Stir mixture until heated through.
7. Serve with garlic croutons.
