Chicken souvlaki with tzatziki dippingsauce

Souvlaki
3Tbs lemon juice
1/2tsp oregano
2tsp olive oil
1/2tsp salt
4 garlic cloves, minced
2lb skinless, boneless chicken breast, cut into 1" pieces
cooking spray
Bamboo skewers, soaked in water
Tzatziki Sauce:
1/2c cucumber, peeled, seeded, and shredded
1/2c non fat greek yogurt
1Tbs lemon juice
1/4tsp salt
1 clove garlic, minced

Prep. Time → 20 min

Cook Time → 8 min

1. Combine first 5 ingredients in a one gallon zip-top bag

2. Seal and shake to combine

3. Add chicken

4. Seal and shake to coat

5. Marinate in refrigerator for 30 minutes to overnight, turning periodically

6. Remove chicken from bag and discard marinade

7. Thread chicken on skewers

8. Heat a coated grill pan to medium-high heat

9. Add skewers and cook 8 minutes, turning once

10. Prepare the sauce by combing all ingredients

11. Serve with whole wheat wraps, kalamata olives, and feta cheese
