Chicken and leek
Recipe by640g Chicken thigh fillets (6 thigh fillets)
2 veg oxo
2 chicken oxo
200g Leeks chopped
1 Large onion chopped
2 large portobello mushrooms approx 125g
4 cloves of garlic
300g Cream-fraiche light
3 glasses or 1/2 bottle white wine
Salt to taste
Pepper a good grind
Prep. Time → 15 min
Cook Time → 45 min
1. Chop the leeks, onion and mushrooms. Place in an oven proof dish
Mix cream fraiche all the oxo cubes, white wine and the garlic cloves (crushed) season with salt and pepper
Mix the cream fraiche mixture with the leeks onions and mushrooms in the dish.
Lay the skinned and boned chicken thighs over the mixture
Sprinkle the top with salt and pepper
Bake in a preheated oven 200C 390f (170c fan) for 45 mins
Serve with vegetable and potatoes
