Chicken and cashew risotto
Recipe by8oz/225g mushrooms
2 tbsp oil
2 chicken breasts (or prepped chopped chicken)
2 cloves garlic crushed
1 red pepper chopped
Bunch spring onions finely chopped
225g/8oz italian easy cook rice
450ml/ 1/4 pint chicken stock
50g/2oz cashew nuts toasted
15ml fresh parsley
salt and pepper
grated parmesan
Prep. Time → 15 min
Cook Time → 30 min
1. Heat oil
2. Fry chicken and garlic and onion for 4-5 minutes
3. Stir in pepper and rice and cook for one minute
4. Pour in the stock
5. Simmer for 15 minutes
6. Add mushrooms, cashews and parsley
7. Cook for five more minutes
8. Season and sprinkle with parmesan before serving
