Chicken* and cashew risotto
Recipe by8oz mushrooms
2 tbsp oil
2 chicken breasts*
2 cloves garlic
1 red pepper
2 leeks or bunch spring onions
225g rice
1/4 pint chicken stock
50g toasted cashew nuts
15 ml fresh parsley
salt and pepper
Prep. Time → 10 min
Cook Time → 25-30 min
1. Chop chicken into small pieces
Fry chicken in a little oil until sealed and remove from pan
Fry onion/leeks until it is soft
Add pepper, garlic and the rice and cook for 1 minute stirring
Return the chicken to the pan
Pour in the stock
Simmer for 15 minutes adding more water as needed
Add mushrooms cashews and parsley and cook for 5 more minutes
Season and serve
2. * Chicken can be replaced with more peppers/courgettes etc for a veggie version
