Cheesy potato & vegetable hotpot
Recipe by500g (1lb 2oz) small new potatoes, washed and sliced
1 large onion, chopped
4 garlic cloves, crushed
2 courgettes, sliced
2 red peppers, diced
2 green peppers, diced
4 tomatoes, chopped
85g (3 oz) butter
salt & pepper
115g (4 oz) good quality cheddar cheese, grated
Prep. Time → 5-10 min
Cook Time → 30 min
1. 1. Bring a large pan of salted water to the boil and add the potatoes. Boil for 5-6 mins until just tender.
2. 2. Meanwhile melt half the butter in a large frying pan and add the onion and garlic. Fry gently until softened, then add the courgettes, peppers, tomatoes and seasoning. Cook over a medium heat for 10-12 mins until softened.
3. 3. Drain the potatoes as soon as they are ready. Add the remaining butter to a smaller frying-pan and heat until it is frothing. Add the potato slices and fry on either side until slightly browned.
4. 4. Arrange the potatoes on top of the cooked vegetables in the large frying-pan and sprinkle the cheese over them. Season well. Place under the grill for 2-3 mins until the cheese is melted and bubbling.
SERVE the potatoes and vegetables straight from the pan.
