- 170gm (6oz) red lentils
- 340ml (12 fl oz) water
- 113gm (4oz) Cheddar cheese, grated**
- 1 onion, finely chopped (and/or some finely chopped red pepper)
- 1 egg
- Fry Light
- Herbs / salt and pepper to taste
1. Method
1. Preheat oven to 190C / 350F / Gas Mark 5.
2. Wash lentils and cook for 10-15 minutes in the water until pureed. Mix in the cheese, onion / pepper, herbs and seasoning. Beat in the egg.
3. Spray a 1lb loaf tin and pour in the mixture. Bake for 45-50 minutes until top is golden brown and firm to the touch.
4. Stand for 10 minutes before turning out of the tin. This works well as a vegetarian Sunday Roast or with salad.
