Cawliflower potatoe salad
Recipe by
1 large head of cauliflower, broken into flowerets
1/4C light real mayonnaise
2 tbsp lemon juice
2 packets sugar substitute (optional, I don’t)
1/2 tsp dried mustard
3 green onions chopped
1 very finely chopped jalapeno and or 2 tbsp chopped green pepper
salt and pepper to taste
I like to add celery and radish
1. Cook Cauliflower in salted water (I don’t salt the water) in a large pot, until tender crisp. Drain and rinse under cold water, pat dry
2. In large mixing bowl mix mayo, lemon juice, sugar, mustard. Add cauliflower, green onions and peppers. Mix well until vege’s are evenly coated. Add Salt and Pepper to taste. Chill 30 min. to blend flavors
3. Yummy!
