Cauliflower Fried Rice of Libby Seidell - Recipefy

1 half head of cauliflower
1 tablespoon sesame oil
1 tablespoon minced garlic
1 half onion, chopped
half cup chopped carrots
one chopped zuchinni
1 cup snow peas
2 eggs, lightly beaten
½ teaspoon black pepper
3 tablespoons soy sauce
2 green onions, chopped

Prep. Time → 20 min

Cook Time → 15 min

1. 1. Place small pieces of the cauliflower into a food processor, and blend until cauliflower pieces are about the size of rice. Set aside.

2. 2. In a skillet over medium heat, allow the sesame oil to get hot.

3. 3. Add the garlic, zucchini, carrots and onions, and cook until the onions are soft and the zucchini is slightly browned.

4. 4. Add the snow peas and cook for two minutes, stirring occasionally.

5. 5. Stir in the blended cauliflower.

6. 6. Once the cauliflower is hot, create a hole in the center of the skillet.

7. 7. Add the two eggs into the center of the skillet, and scramble them as they cook.

8. 8. Once the eggs are cooked, fold them into the cauliflower mixture, covering the hole.

9. 9. Stir in pepper and soy sauce, and serve with chopped green onions on top.
