Butternut squash pizza with rosemary
Recipe by1 cup onion thinly sliced
1/2 butternut squash peeled & thinly sliced (a mandolin works well here)
1 tsp freshly chopped rosemary
3 TB olive oil
1 (16 oz) packaged pizza dough
1 TB cornmeal
2 TB grated Parmesan
Salt & pepper to taste
Prep. Time → 20 min
Cook Time → 30 min
1. Preheat oven 400 degrees
2. Combine onion & squash in a glass baking dish; sprinkle rosemary, salt, pepper & 2 TB olive oil
3. Bake 20 minutes
4. Increase oven heat to 450 degrees
5. On a floured surface create an 8 inch round disk out of the pizza dough
6. Spread cornmeal evenly on a baking sheet
7. Top the dough with the squash & onion
8. Bake 10 minutes
9. Drizzle the rest of the olive oil
